Nose (initial): Aniseed balls, Maraschino, fenugreek, church pews. Nose (with time in the glass): Fermented pineapple, Amontillado, red dates, and horse sweat. Palate: some syrupy tinned fruits up front, peach schnapps, and galia melon, then starts to become more bitter and drying with notes of lime rind and IPA. Finish: ferment y, overripe pineapple, bitter leaves (bay, kaffir lime, eucalyptus),
